Just wanted to send out a quick update. My pantry is getting pretty bare. We are down to some canned fruit, pasta, and pasta sauce. I am getting close to making a shopping trip. I will admit that I have been buying fresh produce on a more regular basis, so the canned items have not been used up as quickly. But I am finding that the canned stuff tastes horrible. I will probably donate the canned items and just buy the fresh stuff. How is everyone else doing with their pantries?

Yesterday I found a package of Yves Veggie Pepperoni in my freezer and it made me want pizza. Instead, I made pizza salad to bring for lunch today: mixed greens, purple onion, grape tomatoes, marinated artichoke quarters, black olives, Yves pepperoni, and some Daiya mozzarella shreds.

good price on the soy milk!! I switched to soy from dairy back in the late 1990s after realizing the dairy was causing too much mucus and sinus issues.

But evidently I am allergic or intolerant of soy as it causes a lot of inflammation and hormone issues. I have had to use almond or hemp or coconut types of “ mylks¯ “ (read a blog from Europe once stating that they felt we should spell it mylk to distinguish from dairy milk. whatever.), even cashew and oatmeal milks... so whatever is on sale works for me now.

I'm nearing the end of the pantry challenge. I'll be going out of town early Friday...will be away for 10 days. It has been almost 2 weeks since I went to the grocery store and spent under $30, so I'm real happy at the results. I probably will have to go to the grocery store tomorrow for water that I want to take on the trip. One thing I won't have to be concerned with is having to throw food out or have it spoiling in the fridge while I'm away. Everything but the condiments will be used before I leave!

yup -me too
found 2 WW hamburger buns waaay in back of freezer and I made panko to throw into:-
I made black lentil balls and they really are good- no recipe just reaching for stuff to get rid of - I fried them a bit to firm and then baked fo r 10 minutes. I used to make regular meatballs everyone loved so I thought back to that but with lentil+ flax egg and all the good spices and some chopped mushrooms and 1 roasted beet I mashed up.

I will be trying to make some breads to use up the flour this weekend- getting better!
Pizza might just be the way to go

I found some frozen pineapple and I have a couple bananas I need to use. I'll put everything in the blender with some light vanilla almond milk. It will use the milk up, too. Oh, and I'll add some ground flax seed that is in the freezer and use it up, too.

I found some frozen fruit tucked away in the back of my freezer. I made a banana, strawberry, blueberry, rasberry, and orange juice smoothie. I'm not sure if it was good or bad, but I made too much and drank it out of the blender. emoticon

Tonight I'm going to be making pasta sauce so I'll be using up a few cans of tomatoes/tomato sauce/tomato paste. I also have some Veggie Life meatless balls in the freezer which will be coming out and brown rice pasta in the cupboard. I did buy two things that are not on my list and that was a dozen limes and a few jalapenos. Can't make pica de gallo without them and I have to have pica on taco salad. Other than that, I'm saving a lot of $$ not shopping!

The Edensoy Soymilk in the boxes is our favorite! When I go to Dollar Tree I stock up on them at $1 each.

I have had the bean pastas- pretty good but I prefer whole wheat. I do love beans too-but not necessarily pasta made from-
Good job on using them in this pantry challenge!

I made some veg broth and will be making tomato soup today and having a "grilled" avocado sandwich using ezelkiel sprouted bread from freezer. I am running out of that BUT I do have a sourdough and will be baking bread this weekend- pita to go with hummus YUM!!!

I am really happy I bought several boxes of Edensoy Soymilk- yes I can make it... but it is time consuming-= I think ..I will do that soon
One of the benefits of making your own soymilk is the okara which is wonderful to use in recipes and Yuba too

Today I made up a half package of “Black Bean Spaghetti” which I think I got at Costco when I went with a friend (I’m not a member any more.). Instead of plain water and straining it, I used some leftover beef broth - because I’m not gonna throw it out, and because it had mushrooms in it (veggies?? kinda!!). I’m sure this will work fine with vegetarian broth. So I put it all in instant Pot, and let it cool at manual for 5 minutes, and let it release pressure naturally. It’s actually pretty good! I wanted to get a feel for how it tastes and “felt”... because I think this will go great with any vegetarian combo one wants to throw at it. I felt like it was a little too low on fat for a #keto outlook, but the purists will focus in on the carbs. However - its very high in fiber and protein, so I think it will work for some and not for others. (You do you, and I do me!). I mostly wanted to share that this product is “new to me” and I found it interesting to try.

My pantry is looking pretty bare, but I am still trying to make the best of things. I currently have a few boxes of pasta, rice, 2 jars of pasta sauce, 4 or 5 cans of fruit, 2 or 3 cans of veggies, and some coconut milk. I thought I had biscuit mix, but I guess I used it all up. My kids are meat eaters, so I have some chicken that I have been using for their meals. But I have been cooking 1 or 2 pieces and then shredding it to add to casseroles, which helps stretch things.

Today I stretch the pasta sauce and make soup. I will add some rice or pasta and some veggies to make a simple soup....assuming I feel like cooking later in the day. I have premade meals for my kids in the fridge. If I do not want to cook for myself, I'll just have a salad or a smoothie.

Holly, sounds like a good plan! I know what you mean about having to relearn after buying and cooking for a large family. (It is just one grown son and myself now.) My friends love it when I "bless" them with a meal or baked good. It is hard for me to throw out good food.

Yay, thank you! I so need to be doing this. I grew up in a family of six so I learned to cook and shop for six and never unlearned it. I am one person, living alone, yet I have two refrigerators and my cupboards are full. For the remainder of March I may only buy the following food items:

greens
tomatoes
mushrooms
fresh herbs
bananas
berries

There will be NO stocking up on BOGOs, which is something I have a habit of doing.

Today I used a jar of alfredo sauce and pasta that I had in the pantry for such a busy day as this. I also used some olives that needed using in the refrigerator. Tonight I will use some cornmeal and beans from the pantry. I am just clearing out all kinds of stuff this month. LOL

The millet casserole sounds good. I have a big bag of millet in the pantry to use, so I will be doing the same soon.

Bilby- The cutlets are from Isa's book Isa Does It- they are the steamed chickpea and vital wheat gluten ones- when I made them I had infused sage into the broth.
-I looked around and found this recipe- connoisseurusveg.com/vegan-chicken-p

and the soymilk and ground flaxseed batter worked well-dipped in tha tand then coated with cornmea and spices-and then I fried it in olive oil
-reheated well too-I am eating a few things like fried food which are soooo yummy I don't ordinarily as I have a bit more to lose..but so good!
-Home made marinara
--not home made pasta...

..although.. I probably will at some point- I like to make ravioli. Sweet potato makes a good filling for that. A little pesto over it...

Today-I am using cashews to set up cheese. Mozzarella from Miyoko's book- I made the rejuvelac.
- I hope to put that over the millet casserole I make over the weekend
Other than the cheese eating leftovers today and not having to cook!
- I have lots of things to do on the todo list..

I think we are all doing great!!!

I picked up some fresh produce the other day at the store. My total was less than $30. Here a few things I've made:

* pasta and tomato sauce
* homemade mushroom stuffed raviolis (used flour and water to make the dough)
* chicken and stuffing (it's not vegan, but my kids aren't vegan)
* rice and tomato soup
* hash browns
* roasted carrots

I'm having fun on this challenge. Plus, I've been watching episodes of Chopped for fun ideas.

When I organized my big freezer yesterday I found 3 large containers of blackberries that I'd picked and forgotten about! I have 2 of them thawing to make a crisp or cobbler (need to look at my recipes). I will be going to a get together with several family members in another town tomorrow and plan to share with them.

I like that I am using up some of the grains I forgot about
Had a Teff+ Amaranth porridge and it filled me up more than the steel cut oats..- not sure why

I have some millet and am going to make a casserole- I have the frozen corn.. I think-if not I have mixed veggies and that will work

I'm doing great on this challenge using up a lot of groceries in the pantry, refrigerator and freezer. However, I am out of greens, potatoes, onions and bananas. I have some fresh citrus, but strawberries and avocados are on sale this week and it would be nice to supplement. So I plan to run to the grocery store tomorrow. I have my menus made out for a week and a grocery list. I should be under my $30 limit. emoticon

I need breakfast foods so my issue is that I can either buy stuff in - I like to eat fruit in the mornings - or try to make something breakfasty with...ahem, coconut flour, tinned artichokes, tinned tomato soup, babaganoush, tinned fava beans, etc.

It has been one week since I went to the grocery store. I will have to make bread soon, and am now out of potatoes and onions. I will evaluate before the weekend if I want to make a trip to the grocery store or hold off awhile longer. So far so good. emoticon

I am doing pretty with this challenge. I will admit that I did go out to lunch with a friend yesterday, but it was more about spending time with the friend and not avoiding the pantry. I have been using items in my pantry to make a variety of items. I have made rolls using some Bisquick (and water). I made a huge batch of chili ~~ used up all the beans. I still have some different pastas, soups, and boxed meals that I plan to use. My schedule has been hectic, so I did not stock my pantry before the challenge. So, I will use what I have and once the pantry is empty, I will buy some more items. As of right now I have plenty to use up, but might run out before the end of the month.

As a side note.... I take advantage of my church food pantry. I will continue to do this. The options can be limited, but I will get what I can and make sure that I use everything.

I have company coming this afternoon and trying to do the pantry challenge AND stay within my goals for the 30 Day Challenge.

Lunch: Vegetarian meatloaf, green beans and potatoes in the pressure cooker, organic yellow squash with green onions, brownies for dessert (I grew the green beans and squash so they came from the freezer, the brownie mix was in the pantry, green onions from the fridge as well as meatloaf ingredients)

Supper: Leftovers smorgasboard from past 2 days :) I plan to eat applesauce and blueberry muffin from breakfast (using blueberries and applesauce from freezer and w.w. flour from pantry)

LetsGoPlay, I think your experiment really does look like liverwurst. That was one of my favorite sandwiches as a child.

I've been experimenting today, too. Trying to use up perishables in my refrigerator (mushrooms, sweet peppers, zucchini) and also grape tomatoes. They all went in today's lunch and supper recipes.

Magnolia- smart! I do love okra and fried..oh man..

So- yesterday I ended up making what I can only call vegan liverwurst of all things. I had a sunflower cream cheese that I really could no get rid of- it was from some online recipe..anyhow.. I added some of this an d that and then used agar -where you add to water..the powder and blended it
yep.. it looks a bit like pink slime BUT it tastes good! So I will be making a sandwich of it- too bad I don't have rye bread but I have ezekiel sprouted in freezer..I have pickles and I have some good mustard

On to day 3 and just making iit up as I go along

I did not buy any groceries yesterday or today. I had a big bag of organic okra that came from my garden already breaded and ready to fry stored in the freezer. I hardly do fried foods anymore, so I cooked it and took it to the church dinner today. That way I got a serving, but no left overs to tempt me and more room in the freezer! March 1 and 2 emoticon

Here are my "rules" for the challenge:

* I will not spend any money to buy food items, with the exception of milks and fresh produce.

* I will not not eat meals out (no cheating and ordering a pizza).

* I will utilize all the items in my pantry, fridge, and freezer.

* I will do the challenge for the entire month of March.

For the first 3 weeks of March: (I will be out of town the last week)

I will base my menus on the whole grains/ flour that I have on hand in the pantry

Also canned goods in the pantry

and the garden vegetables and fruit that is in my freezer

I will buy fresh fruit (such as bananas) and produce (such as potatoes, greens and onions) to supplement

Also soy or almond milk/ creamer

Bottled water

Any condiments (though I may be able to get by on what I have now)

And large burger buns to go with the veggie burgers I have in the freezer

I am limiting us to $30 a week or less to encourage myself to really use the stuff on hand.
