These look good!
I have not made any cheeses in awhile. I have a book by Miyoko- have yet to buy her cheese from the store
as it is pricey and I have Jule Aron's cheese book too - she has a great one with zucchini and I tried to find a link to it bu no..

Anyhow..I will go look at these. I buy my cashes from Amazon. I like the Terrasoul Mylk grade ones.

Gail, thanks for the easy and delicious looking recipe. I definitely want to try it.

Julia, use raw cashews to make cashew cheese. The soaking supposedly makes them blend better, but I don't always soak mine and it comes out ok. No bitterness or poison either way :)

Is it best to buy raw cashews or roasted or what? I've had a few cashew "cheese" type things from other places but never really made any at all. I get somewhat confused because supposedly they have to be soaked or something ? I forget ? to get rid of a bitterness or a poison or something?? what's the deal with that??

But I love chickpeas so this recipe can't be too hard. In fact, I bought some "pasta" that was made with chickpeas a few weeks ago, and need to try them out.
