I had canteloupe, banana, and some chai tea for a snack. Then dinner was a homemade Massaman Curry with sweet potato, tofu, mushrooms, and broccoli, served with brown rice. So good!

Lunch was a taco salad with brown rice rather than tortilla chips. The only dressing was salsa and some lime juice

For dinner I had 2 cups steamed Normandy veggies mixed with a Lean Cuisine Sicilian-style pesto with lentil pasta. Vegan with no bad ingredients mostly organic.

Church dinner today...I am taking a dish of cooked organic carrots and fajitas made with homegrown slices of red and green bell peppers, onions and some "beef strips" I had in the freezer. Using the last of the corn tortillas. (The pantry challenge is really cleaning out the freezer and fridge)

Supper will be the last of the blueberry crisp with a warm cup of Pero.

We were gone most of the day to a family get-together. They wanted to order Asian, so I got General Tso's Tofu (Tofu in a spicy sweet sauce, broccoli and rice) for lunch. I couldn't eat it all so it ended up being supper, too. I took a large homemade blackberry cobbler to share and left the leftovers with the family.

I have company coming this afternoon and trying to do the pantry challenge AND stay within my goals for the 30 Day Challenge.

Lunch: Vegetarian meatloaf, green beans and potatoes in the pressure cooker, organic yellow squash with green onions, brownies for dessert (I grew the green beans and squash so they came from the freezer, the brownie mix was in the pantry, green onions from the fridge as well as meatloaf ingredients)

Supper: Leftovers smorgasboard from past 2 days :) I plan to eat applesauce and blueberry muffin from breakfast (using blueberries and applesauce from freezer and w.w. flour from pantry)

Lunch: I chopped up sweet peppers, zucchini, garlic, sprinkled with oregano and sautéed lightly in a little olive oil. Halved a few grape tomatoes. Added it all to some cooked brown rice, stirred in a little greek yogurt. Put in baking dish, made an indention in top for an egg. Baked 10 minutes. (Using up stuff in the fridge for the Pantry Challenge) Homemade unsweetened applesauce for dessert.

Supper: Hippie Loaf (made with black beans, quinoa, mushrooms, celery, carrot and other seasonings) with homemade brown gravy

Penne pasta with vegan cheese sauce (made with carrots and potatoes) and steamed broccoli (very good and filling...Son ate 3 or 4 helpings!)

I like lazy days, too :)

Today my son took me and a friend of ours out for lunch to a Mexican restaurant that has good vegetarian choices. I had rice, beans, salad with guacamole and a moderate size burrito wrap stuffed with grilled veggies. It had a small amount of the white cheese on top.

I was not going to eat any supper, but decided to microwave some bite sized gluten free pizza treats that I'd never had before. (They were just ok)

I think it is good to have lazy days!
My eldest "kid" is in town and a friend..kinda belated birthday so I am going to make some sort of cake-
lol
so that is part of dinner
and baking tofu..will go marinate
Lunch= Loaded salad
Supper- stir fry..possibly side of peanut noodles..and Isa's pumpkin cake for dessert.. gotta go get the book..

Lunch will be a huge -loaded salad- chickpeas+ avocado+ roasted beets...some kind of dressing..

Supper-quinoa+ black beans and corn and salsa on top..hmmm might move avocado to that..

For lunch today I plan to have left over Tofurky Roast with wild rice dressing. I'll cook some home grown green beans and potatoes to go with it.

Lunch was a pasta dish with garlic, shallots, walnuts and chopped kale. And a small glass of Silk dark chocolate almond milk.

Supper will be the last 2 left over vegan hot dogs/ buns. And a cup of red grapes.

I made up my own recipe for stew today. Used a box of Butternut Squash Soup low sodium from Trader Joes. Added potatoes, sweet potato, asparagus, mirepoix, and mushrooms. My mom and I both liked it.

Today I will be at a church potluck for the early afternoon (soup, salad, sandwiches). I made a vegan sandwich spread from mashed "hot dogs", Just Mayo, pickle relish, ketchup, mustard, onion and garlic powder. This is a favorite sandwich I always get asked to bring. There will be vegan soup there to have with my sandwich.

Panini grilled with low fat mozzarella, zucchini, garlic and nicoise olives. Roasted potatoes on the side.

I have leftover beans and greens and some broth- going to soup them up for lunch

Supper- Kale cooked. Lemon sprinkled on top. Sweet potato -side salad

OH!..but tomorrow..oh..I just made-
I marinated a block of tempeh in herbal stuff stuff.. and cooked it up and added my aquafabanazisee and grated carrot and chopped celery and cilantro and onion. Letting them party together and sandwich or cracker spread tomorrow with a soup- prob. carrot ginger
