I actually didn't mean to add so many la la's when I was setting it up, but decided to leave it that way.

The ambrosia sounds good AND beautiful done that way. I'm probably going to make something similar with the orange slices (or mandarins), kiwi, red and green grapes, and possibly coconut (depending on whether DS's new GF likes coconut.)

I'm going to try again on the dressing - and this time use a 9x12 baking dish for it. Thanksgiving I used the huge corningware deep casserole my Mom always used, and it was too done on top and uncooked in the middle.

AMBROSIA

In myths, ambrosia is the food eaten by Greek gods to preserve their immortality. But Americans know it as a combination of oranges and coconut-a very popular dessert in the South. In some sections, it is traditionally served for Christmas dinner.

Cut rind and white membrane from juicy oranges, then cut crosswise into thin slices, discarding the seeds. Put a generous layer of orange slices in a crystal bowl, sprinkle with sugar, and cover with a layer of shredded coconut. Continue layering with oranges, sugar, and coconut, ending with the coconut. Chill several hours before serving.

Pam, the cooking sounds as pleasant as the dinner will be. Thanks for the details of how you have prepared the recipes. I will try making each one.

My mom lives very close by and she's a big part of my life like yours is for you. I've always listened to her opinions and advice and tried to take after her. Have you been playing Christmas music on the piano?

My mom and I are fixing Christmas dinner together. I am the main cook in the house.

We are fixing my mom’s oyster stuffing she makes every year, but I have modified it to be healthier. I added a package of riced cauliflower from Trader Joe’s, as well as a package of mirepoix from Trader Joe’s. Instead of half a cup of butter I add ¼ cup avocado oil. I use egg substitute for the eggs. I would have just used fresh ground flax seed in water, but my mom thought the commercial product might be better.

We are also roasting veggies, including: apples, sweet potatoes, sweet onions, and large colorful carrots. I sprinkle cinnamon and nutmeg on top of the veggies.

I am also fixing cranberry sauce made with 1 cup soaked dates and 1 cup water pureed in a Vitamix, and then added to a pot with one pound cranberries and cooked until all the cranberries popped. It is not too sweet.

We are also having mashed potatoes, and olives.

Yum!

My pumpkin pie is not going to have crust, but instead I'll serve it in bowls that hold about 1 cup and put 3 shortbread cookies at the rim. For the past few days I've already been having stuffing and cranberry sauce at lunch.

I found out my son's new girlfriend is going to make some kind of greens for our green vegetable and also a pumpkin pie. emoticon I've only met her a couple times, so this will be a nice time to get to know her better.

My MIL did the marshmallows on top of the sweet potato casserole as well!

One more thing I'll be making is the old standard fruit salad with mini marshmallows, sour cream (I sub about half plain Greek yogurt with the sour cream) pineapple, maraschino cherries, mandarin oranges, coconut and walnuts. Somewhere I got the idea of serving it in the little antique fragile Oriental painted tea cups that were my grandmother's.

I'm cooking for 7 people. My mom is making a turkey, but I'm responsible for everything else. I'm making:

Mashed potatoes
Corn
Vegan gravy
A green vegetable
Whole wheat dinner rolls
Maple-glazed carrots (my kid's favorite)
Probably some roasted sweet potatoes
Pies (probably pumpkin, sweet potato, and my mom's favorite tart lemon meringue, but we'll see how much energy I have)

Marshmallows on the sweet potato casserole is something I've liked ever since Hazel on the old TV show made some. I liked the way it looked. Making certain things to send home with the children and grandchildren is a pleasant part of holidays. Years ago we lived in Vermont so I still use real maple syrup in many things I make.

emoticon I use butter in favor of margarine, too. We've always had our TG meal mid-day, and then leftovers in the evening. I've gotten smart, though, and try to send most of the tempting stuff home with my sons. I think I love the dressing so much because Thanksgiving and Christmas are the only time we have it. The sweet potatoes are SO good just on their own without all the added sugar and butter, but my husband and sons really really like the casserole. The grocery stores all have sweet potatoes ridiculously low priced now, so I've been enjoying them just plain baked.

Apple slices with peanut butter is one of my favorite things! (have never tried almond butter)

I try to fix dressing like my Mom did, too. I melt butter in the biggest skillet, add the onion, celery, and plenty of poultry seasoning, salt and then diced bread. Mom used Blue Bonnet but I use butter. emoticon For years I didn't have a very planned lunch. Then I started having dinner at lunchtime so I could have the afternoon to work off the square meal. Dinner is a lighter meal for me...many times a sweet potato, or almond butter and an apple. emoticon

I'm still trying to make dressing (stuffing) like my Mom's. She died in 2016, so I've attempted it twice using her notes and it was alright, just not as good as hers. Dressing is my favorite treat at Thanksgiving. Her recipe uses celery, onions, parsley, mushrooms and bread and cornbread.

I'm also making the sweet potato casserole I've made several years now. Although I don't follow it exactly (usually add more sweet potato), this is the recipe I use:

Thanksgiving is right around the corner and I'm still not sure what I'm making except cranberry apple pie, and huge baked potatoes with toppings (chopped chives, shredded sharp cheddar, the tip tops of broccoli flowerettes, parsley, sour cream, black pepper).

Shaved Brussels Sprout and Cranberry Salad

Salad:
1 and 1/2 pounds Brussels, thinly shaved
~ 3/4 cup dried cranberries
2 green onions, thinly sliced
1/2 cup slivered almonds

Dressing:
1/4 cup EVOO
1/4 cup balsamic or red wine vinegar
2 tsp. coarse dijon mustard
1 Tbsp. maple syrup
1 clove garlic, pressed
1/4 tsp. fresh ground black pepper (or to taste)
1/4 tsp. salt (or to taste)

Try the Forks Over Knives website. It is free and they have lots of good recipes.

I am cooking for just three people, 2 meat eaters and myself. I plan to buy a Quorn Turky Roast and make the rest vegetarian. Cornbread dressing, baked sweet potatoes, green beans with carmelized onions and cranberry sauce. Lots of cranberry sauce. I usually add some Morning Star Sausage (veggie) to dressing. Make my own mushroom gravy. Probably fix some Pumpkin pudding or pie for dessert. If they must have Turkey, you can buy small Turkey roast at Walmart in ready to roast pan. I have done this in past. Hope this will help with ideas.
